Roast potatoes can make or break a Sunday roast, so if it's your turn to cook Christmas dinner you might be feeling the pressure, don't worry! here's how to cook perfect roast potatoes with beef fat.
Beef Fat
I use this super simple recipe from yogapantsandbonbons to render my beef fat in a pressure cooker (this is the model i use), there's equally simple slow cooker and oven recipes available online if you don't have a pressure cooker. I usually make enough for three or four roast dinners to save time. If you can ask your butcher for a 50/50 split of beef and lamb fat!
Cooking with rendered beef fat or 'tallow' also has a bunch of health benefits; It's a source of CLA which can assist in fat loss and protect you from disease, rich in vitamins and iron, research also shows that cholesterol particles derived from fat don't increase the risk of heart disease and actually natural saturated fats (found in beef) can actually reduce the risk of heart disease by lowering the bad (LDL) cholesterol and improving the ratio of good (HDL) cholesterol.
Potatoes
Shopping for potatoes can seem a little pedantic, after all pot-a-to, po-tat-o right? But there area a few things to keep in mind, starchy potatoes like russets are great for baking, while waxy potatoes like fingerling potatoes are great for soups and salads, when mashing or in this case roasting we want a middle of the road or 'all-purpose' potato like maris piper so we can achieve a almost creamy fluffy centre but thick crunchy exterior.

Ingredients
- 5 Tbsp Beef Tallow
- 600 g Maris Piper Potatoes
- 30 g Herbs (See Notes)
- 4 Cloves Garlic
Instructions
Parboil the potatoes

Hours or even a day before, evenly size all your potatoes, about 2" and boil with the slightest pinch of salt for 10 minutes, you'll know they're done when you can stab them with a sharp knife and they slide straight off. Once cooked drain and bounce about the colander a little to rough the edges up, leave until completely cool.
Preheat the fat

Preheat the oven to 180°C. Add 2 Tbsp of beef fat / tallow to a baking tray and put in the oven for 2 minutes. meanwhile chop up your herbs and crush the garlic.
Cook Potatoes

Add the potatoes to the preheated fat and ensure they're evenly coated, add the crushed garlic cloves and sprinkle with the herbs, cook for 30-45 minutes then turn over the potatoes and add 2 more tbsp of beef tallow. Cook for a final 30-45 minutes and serve.

Beef – Rosemary / Thyme
Chicken / Turkey – Thyme / Parsley
Lamb – Rosemary/Mint
Pork – Sage/Thyme
